‘Game on’ for Hospitality and Catering visit

Hospitality and Catering students got an exclusive insight into how to prepare and cook game in a lecture from a leading expert this week.

Hospitality and Catering students got an exclusive insight into how to prepare and cook game in a lecture and demonstration from a leading expert this week. 

Chairman of The Craft Guild of Chefs Lee Maycock came in for the day to talk students through how to cook and prepare game and also talk about the benefits of eating it. The Craft Guild of Chefs a fantastic reputation as the leading Chefs’ Association in the UK and has many members worldwide.

Often seen as the more challenging to prepare and with a distinctive taste, the students got a real insight into how to use the meat to its best advantage. 

The VRQ Level 2 students were then tasked in pairs to create two dishes – one with venison and one with rabbit to show what they had learned. 

The winning duo were Megan Trundle and Emily Brown, who along with the other students reported an enjoyment in the newfound confidence they had in dealing with game
