Standards remain high as The Stables retains AA College Rosette Award

Dining at Oaklands College restaurant The Stables has been named a ‘worthy winner’ in retaining its AA College Rosette Award for a second year following a recent inspection.

The restaurant which is based at the College’s St Albans Campus retained its AA College Award, which sees an independent AA Inspector examine cuisine, venue and service delivered by the Hospitality and Catering team. 

The 40-covers restaurant which runs regular lunchtime and set evening dining services welcomes both students, staff and members of the public to dine on site, taking in the students at work as they deliver dishes to the pass to serve to hungry diners. 

The AA College Rosette Scheme is a focused arm of the widely known AA accreditation star and rosette scheme for hotels and restaurants which specifically recognises talent in the hospitality industry of the future. By assessing catering colleges, the scheme promotes high standards at grass roots level. 

After achieving College Rosette status for the first time in 2017, the team are thrilled to be able to retain the title for another year as recognition of their hard work. With inspectors able to book and call in at any time, it is aimed to be a true reflection of the day-to-day workings of the restaurant. 

Dishes served in the assessed lunchtime service included Duck Parfait with Red Onion Jam and Brioche, Steamed Plaice Fillet, Dauphinoise Potatoes, glazed carrots with buerre blanc and Vanilla Panna Cotta to finish. 

Head of Department in Hospitality and Catering Clare Hood said: “Retaining the College AA Rosette is a testament to the high standards we set in our training at Oaklands to prepare our students for the working world. 

“The Inspection itself recognised strong food output from the team and good direction from head chef Martin West. This is a great news to top off a great year at the Stables and will set good standards for new students starting in September.”
