Lauren first became interested in cookery at a young age, and after working alongside her mother in a kitchen for work experience, she knew she wanted a career in cookery.
“I came for an open day at Oaklands and decided this was the place for me. The facilities are fantastic and are very similar to what you come across in a professional kitchen,” said Lauren.
Lauren was able to hone her skills in The Stables, the College’s professional kitchen and restaurant where students run full lunch and dinner services for paying customers.
“The facilities are very similar to those you find in a professional kitchen so you get to know the equipment and it isn’t a shock when you start working. Our tutors really focus on quality and if we have done something that isn’t quite right, they tell us,” said Lauren.
Lauren’s hard work was paid off when she was offered a role as a sous chef at THOMPSON@Darcy’s, a fine dining restaurant in St Albans. She works there several days a week as well as attending her classes at college.
“I had a one day trial with THOMPSON@Darcy’s which was awesome! After that they offered me a job.
“The restaurant is hoping to get a Michelin star next year, so high standards are very important and the course at Oaklands has really set me up well.”
