About the course

A vibrant, hands-on cookery journey celebrating bold spices, fresh ingredients, and iconic dishes from across the Caribbean and Latin America. Each week you'll master a new main dish and a complementary side or dessert, building confidence, technique, and a seriously delicious repertoire.Week 1 Jerk Salmon Wrap with fresh pico de gallo or salsa and a Jamaican Gingerbread. Week 2 Pastel'n, a layered sweet-plantain and savoury beef bake and Callaloo or Crispy Cheese Balls. Week 3 Moqueca, a fragrant coconut-based fish stew and Sweet Potato Pone and week 4 Chaufa Peruvian fried rice and causa. The ingredients required are not included in the fee. Before the first lesson a list will be sent of ingredients/ equipment you will need to bring.

Continue to develop your cookery skills by joining other themed cookery courses.

Materials to be provided by the learners: Notebook and pen, apron and tea towel. Approximately 1 week before the course is due to start learners will receive a list of ingredients to purchase for the first lesson.
