About the course

Embark on a vibrant, hands-on culinary journey through the flavours of the Caribbean and Latin America. Discover bold spices, fresh ingredients and iconic regional dishes while developing practical cooking skills and confidence in a professional kitchen. Each week, you will create a delicious main course alongside a complementary side dish or dessert, learning new techniques and building an exciting repertoire of international recipes to recreate at home. Course Menu - Week 1 Jerk Salmon Wrap with fresh Pico de Gallo or Salsa Jamaican Gingerbread; Week 2 Pastel'n (a layered sweet plantain and savoury beef bake) and Callaloo or Crispy Cheese Balls; Week 3 Moqueca (fragrant Brazilian coconut fish stew) and Sweet Potato Pone; Week 4 Chaufa 'Peruvian-style fried rice and Causa (traditional layered potato dish). By the end of the course, you'll have explored a range of authentic flavours, mastered new cooking techniques and gained the confidence to bring the taste of the Caribbean and Latin America to your own table. Please note: Ingredients are not included in the course fee. A list of ingredients and equipment required for each session will be sent before the first class.

Materials to be provided by the learners: Notebook and pen, apron and tea towel. Approximately 1 week before the course is due to start learners will receive a list of ingredients to purchase for the first lesson.
