GCSE Food Technology students from Onslow St Audrey’s School enjoyed a culinary masterclass in cooking and presentation led by Oaklands College Head Chef, Martin West.
Drawing on his extensive industry experience, Martin shared his knowledge of different cuts of meat, professional cooking techniques and the art of elevating a dish through thoughtful presentation. He also demonstrated how attention to detail can transform a meal into a fine dining experience.
Oaklands’ Hospitality and Catering students played a key role in the event, going above and beyond to create a memorable dining experience for their guests. The menu featured dishes including chicken satay ballotine with peanut sauce, spinach and pine nuts, followed by beer-battered cod with hand-cut triple-cooked chips, pea purée and fresh tartare sauce. A popular dessert choice was a delicious Normandy apple tart served with vanilla ice cream.
Feedback from both staff and pupils was overwhelmingly positive. Thank you to everyone involved in showcasing the talent, professionalism and dedication of our Hospitality and Catering students, and for providing an exceptional experience for one of our valued feeder schools.
“Thank you for a wonderful experience at your campus and restaurant, we all had a great time. Martin, the demonstration was valuable as we don’t get an opportunity to cook steak. We would love to come back with next year’s cohort, today was incredibly useful for their upcoming NEA2 assessment." — Nathalie, Food Tech Teacher at Onslow St Audrey’s School
