Hospitality & Catering Courses in Hertfordshire

Oaklands can prepare you for an exciting career in the Hospitality and Catering industry.

We serve up a wide range of tasty Hospitality & Catering courses with a variety of qualifications and training to help you succeed in your chosen pathway, from operative to management. You will achieve your qualification by developing and practising skills, knowledge and understanding within The Stables, our fully-functioning state-of-the-art kitchen and restaurant on site.

Our Hospitality & Catering facilities are the only training kitchens of their type available in this part of Hertfordshire, capable of delivering courses up to the VRQ Level 3 in Advanced Professional Cookery as well as BTEC Level 3 in Hospitality.

All of our full time programmes include opportunities to support and enhance your learning so that you can achieve your goals and ambitions. Students enrol on a Study Programme which individualises their education whilst enhancing their employability skills. A Study programme is made up of four key elements which includes a main vocational qualification, the development of English and maths through the study of GCSE’s or Functional Skills, Work-related learning through work experience and Personal Development Reviews.

Level 1 Certificate in Food Preparation and Cooking

The course is a combination of skills sessions in our state of the art kitchen; class based theory lessons and work experience in our restaurant kitchen. The course has three mandatory units covering Food Safety, Health and Safety and Teamwork in Hospitality. You will also cover food production units covering vegetables, Salad, Fruit, Fish, Meat and Poultry, Sandwiches and Bread products.

Level 1 Diploma in Introduction to Professional Cookery

This course is designed for those students who wish to gain a solid grounding in the practical cooking, preparation and serving skills required to become a chef or work in a self service restaurant. You will learn about ingredients and how to prepare, cook and present meat, fish, vegetables, pasta and rice dishes. You will learn the importance of hygiene and nutrition and compatibility of flavours. You will also be introduced to health and safety and food hygiene procedures.

Level 2 NVQ Diploma in Professional Cookery

The optional units cover a range of skills based around preparing, cooking and finishing the following products: Meat, Fish, Poultry, Vegetables, Soups, Sauces, Rice, Pasta, Bread, Pastry, Cakes, Sponges, Hot and Cold Desserts.

Level 2 VRQ Diploma in Professional Cookery

This course is designed as a natural progression from VRQ level 1. It enables you to gain a professional grounding in preparation, cooking, plating and serving skills.. You will cover a wider range of skills needed to become a professional chef which include how to prepare, cook and present meat, offal, fish and shellfish to name a few. You will learn the importance of hygiene, food costing, menu and kitchen planning, nutrition and compatibility of flavors.

Level 3 Diploma in Advanced Professional Cookery Kitchen and Larder

The VTCT Level 3 Diploma in Advanced Professional Cookery is a technical level qualification that will prepare learners for a career as a chef in a professional kitchen. This qualification is suitable for 16- to 19-year-old learners and builds on existing knowledge and skills of professional cookery to prepare learners for a career as a chef.
