Budding chefs learn secrets of fine dining

Ten Hospitality students discovered the art of fine dining when they recently visited top restaurant THOMPSON@Darcy’s in St Albans.

Ten Hospitality students discovered the art of fine dining when they recently visited top restaurant THOMPSON@Darcy’s in St Albans.

The students were invited into the kitchen of the stylish restaurant and had the chance to see what happened during a busy lunch service.

After watching chef Phil Thompson in action in the kitchen, the students were able to look around front-of-house and even sample some of Phil’s delicious creations.

George Mercer, the College’s Hospitality Lecturer, said: “Phil prepared a starter, main course and dessert for the students to taste, share and discuss. He then answered questions from the students and explained the restaurant accolade system, which is part of their first assignments.”  

The link with Oaklands will continue as Phil has recently  employed former student Lauren Hart as a trainee sous chef. 

“Lauren was recommended to me by George for her skills, attitude and potential. This is a hard, competitive industry to be in and I am happy to help potentially good future chefs get on the career ladder when I can,” he said.  

Lauren, 18, who reportedly cried when she was offered the job, said: “I’ve worked hard to pursue my goal of a long term career as a chef, so when Phil offered me the position at his restaurant I jumped at the chance.  It’s completely different to anything I have done before, it’s a really high level of food and completely knackering, but it’s absolutely brilliant and I love it.”
